Super Vegetable No. 1: Broccoli –Italian Wild Cabbage

Originally from Italy, broccoli is a member of the cabbage family, and can be bought fresh or frozen. The head of broccoli is made up of small individual sprouts.

Why it’s healthy: This vegetable is a rich source of three powerful antioxidants – vitamin A, vitamin C and the mineral selenium. Selenium helps prevent oesophagus and stomach cancer. Vitamin A prevents lung and bladder cancer and vitamin C builds up resistance to cataracts (opacity in the lens of the eye).

Winter Vegetable Crostata with Goat Cheese and Thyme

March is so hard. Here in Brooklyn, the weather is starting to warm up, making me think about strawberries, asparagus, ramps, garlic scapes, peas, favas – argh! Did I mention I’m sick of winter? I’m making lemonade out of lemons here by continuing to celebrate winter’s bounty – yams and winter squash and beets and Jerusalem artichokes and onions, sprinkled with thyme, green onions, and goat cheese, and all baked into a buttery crust. Maybe I’m not ready to say goodbye to winter after all. (OK, that was a lie, I’m totally ready.)

Vegetable Sculture At Ellerslie Flower Show In The World

Vegetable sculpture at 2005 Ellerslie Flower Show, Auckland, New Zealand. This is one segment of the display, which had Appetisers, Starters, Mains, and Desserts sections, as well as smaller displays for Soup and Wines. This is the Mains section. It features a spit-roasted peanut pig, a rosemary hedge, mint, two types of potatoes, red capsicum coals, silver beet, kumara.
